1/2 tsp garam masala
1/4 tsp salt
350 g boneless chicken breast
2 tbsp yogurt
juice of 1/2 large lemon
3-4 slices hot Thai chili

Preheat 1/4 cup vegetable oil in a pan until hot.

Add 1 black cardamom and 2 cloves to the oil.

Add 1 large sliced onion and cook for 7-8 minutes until softened.

Add 1 medium tomato and cook for another 3 minutes.

Add 2 tbsp garlic paste and chopped ginger, cooking for 1 minute.

Add 1/2 tsp turmeric powder, 1/2 tsp garam masala, and 1/4 tsp salt, adjusting spices to taste.

Add a little water to prevent burning and cook the masala for 5 minutes on medium to low heat.

After 6-7 minutes, check that the masala is cooked and fragrant.

Add 350 g boneless chicken breast and mix well, covering the pan.

Cook for another 5 minutes on medium to low heat, checking for moisture.

After 80% cooked, add 2 tbsp yogurt (beaten) to the chicken.

Increase the flame to high and add 1 tbsp achar masala and a little more if desired.

Add juice from 1/2 large lemon and 3-4 slices of hot Thai chili.

Mix well and reduce the flame to low, cooking for another 7-8 minutes until ready.

Turn off the heat and let the dish rest for 10 minutes before serving.
