It is characterized by its crispy kachori filled with a mixture of potatoes and chickpeas, topped with various chutneys and spices. This dish is often served during festivals, celebrations, or as a snack, showcasing the vibrant flavors and textures of Indian cuisine.

Take 1 cup of fine semolina and grind regular semolina if needed to make it fine.
Add 1/2 teaspoon of salt and 1/2 teaspoon of ghee to the semolina.
Mix well and add room temperature water gradually to knead the dough until it's semi-soft.
Let the dough rest for 10 to 15 minutes.
After resting, the dough should be slightly firmer, resembling fresh mawa.
Divide the dough into small portions and roll them into medium-sized discs, ensuring they are not too thin.
Heat oil in a frying pan on high flame until hot.
Fry the rolled discs until they puff up, then reduce the flame to low and fry for 7 to 8 minutes until golden brown and crispy.
Assemble the kachori by placing boiled potatoes, chickpeas, chopped onions, and tomatoes on top.
Sprinkle chaat masala, add green chutney, tamarind chutney, pomegranate seeds, and sev on top.
Garnish with chopped coriander leaves and serve immediately.
