Hungarian Unstuffed Cabbage Rolls

Hungarian unstuffed cabbage rolls, or 'töltött káposzta', are a comforting dish that reflects the hearty, rustic cooking of Hungary. Traditionally made with cabbage leaves stuffed with a mixture of meat and rice, this unstuffed version simplifies the process while keeping the same rich flavors. Often enjoyed during family gatherings and holidays, it showcases the importance of cabbage in Central European cuisine. Today, variations can be found in many countries, adapting the dish to local tastes and ingredients.

Greek yogurt reduces calories while maintaining creaminess
Plug in the Instant Pot and set it to the sauté function.
Add 1-2 tablespoons of avocado oil and let it heat for a couple of minutes.
Add the ground meat and sauté until fully browned, draining excess liquid.
Add the diced onion and garlic to the browned meat and sauté until the onions are translucent, about 2-3 minutes.
Add the chicken stock and strained tomatoes to the pot and mix well.
Sprinkle in the Hungarian paprika, salt, and pepper, and mix everything together.
Seal the lid on the Instant Pot and set it to pressure cook for 15 minutes on high pressure.
After 15 minutes, perform a quick release to release all the steam.
Open the lid and add in the rinsed sauerkraut, cooked rice, and roughly chopped cabbage, mixing everything together.
Seal the lid again and cook for an additional 5 minutes on high pressure.
After the second cooking time, open the lid and check that everything is cooked perfectly.
Plate the dish and add a dollop of sour cream on top, sprinkling with more paprika before serving.
