Add bulgur wheat to a bowl and rinse it twice.
Pour enough water over the bulgur wheat to cover it and let it sit overnight or for 3 to 4 hours to absorb the water.
In a pot, add water, lime skin, and cinnamon sticks.
Add a portion of the soaked bulgur wheat to the pot and ensure there is enough water to cook it down until most of the liquid evaporates.
Cook the bulgur wheat mixture until it reduces, about 5 minutes, then add unsweetened almond milk instead of milk.
Remove the lime skin, cinnamon sticks, and any other solids from the pot after cooking.
Blend the mixture until smooth and strain it if a smoother consistency is desired.
Return the strained mixture to the pot and add sugar cane, a pinch of salt, nutmeg, and additional cinnamon powder.
Add a little coconut milk and butter to the pot and stir.
Allow the porridge to cook for a couple more minutes to let the flavors combine.
