1 teaspoon of chopped garlic
a handful of cashews
thinly sliced cabbage
thinly sliced carrots
thinly sliced bell peppers
sweetcorn
2 tablespoons of soy sauce
2 tablespoons of hot and sweet sauce
2 tablespoons of tomato ketchup
2 teaspoons of salt
2 teaspoons of black pepper
2 cups of rice boiled and cooled from the day before
2 teaspoons of sesame oil
a handful of spring onions sliced into thin rings
1-2 teaspoons of dark soy

Heat cooking oil in a large skillet over medium heat.

Add chopped garlic and sauté until fragrant.

Stir in cashews and cook until slightly toasted.

Add thinly sliced cabbage, carrots, and bell peppers; stir-fry until softened.

Add sweetcorn and mix well with the vegetables.

Push the vegetables to one side of the skillet; add boiled rice to the empty side.

Pour soy sauce, hot and sweet sauce, and tomato ketchup over the rice; mix thoroughly with the vegetables.

Season with salt, black pepper, and drizzle with sesame oil; stir well to combine.

Finish with a drizzle of dark soy and garnish with spring onions.
