1 kg chicken livers

1.5 tbsp cooking oil
2 onions (red)
4 cloves garlic
1/2 thumb-sized ginger
1 medium carrot
1 tsp garlic powder
black pepper (to taste)
1 tsp peri peri seasoning
1 seasoning cube
1 medium bay leaf
splash of water
1 heaped tbsp tomato paste
4 dashes Worcestershire sauce
1 tsp lemon juice
2 chicken smokies
assorted peppers (green, yellow, red capsicum)
day-old rice
plain yogurt (to taste)
1/4 tsp sugar
coriander (for garnish)

Wash and trim 1 kg of chicken livers to remove excess blood.

Heat a wok over medium-high flame and add 2 tbsp of cooking oil.

Carefully add the chicken livers to the pan and fry for 3-4 minutes, stirring with a wooden spatula.

Observe the color change of the livers from purplish-red to golden brown as they cook.

Prepare assorted peppers (green, yellow, red capsicum), coriander, carrots, garlic, ginger, and onions.

Continue to fry the chicken livers for an additional 4 minutes, stirring often to prevent burning.

Once cooked, transfer the chicken livers to a bowl using a slotted spoon.

In the same pan, add 1.5 tbsp of cooking oil and then add the chopped red onions, cooking until fragrant.

Add 4 cloves of crushed garlic and 1/2 thumb-sized ginger to the onions and sauté for 30 seconds, watching carefully to prevent burning.

Return the chicken livers to the pan, coating them with the buttery onions.

Add in the carrots and cook for 1 minute.

Season the mixture with garlic powder, black pepper, 1 tsp of peri peri seasoning, 1 seasoning cube, and 1 medium bay leaf.

Add a splash of water, stir in 1 heaped tbsp of tomato paste, 4 dashes of Worcestershire sauce, and 1 tsp of lemon juice.

Let the livers cook for around 2 minutes, checking the seasoning and adjusting if necessary.

In a separate pan, heat 2 tbsp of cooking oil over medium-high flame for the stir fry rice.

Add 2 chicken smokies to the pan and cook for around 1 minute, checking on the chicken livers in between.

Add plain yogurt to the chicken livers for creaminess and stir well.

Check the seasoning of the chicken livers and add 1/4 tsp of sugar to balance acidity.

Transfer the cooked smokies to a chopping board, chop them in half, and slice them.

Add assorted peppers to the stir fry rice and cook for 1 minute, maintaining their crunch.

Add the day-old rice to the stir fry, along with the chopped smokies and season with black pepper and salt.
