Marinate the moose meat in dry Merlot red wine for about 18 hours.
Cut the moose meat into pieces.
Heat olive oil in a roasting pot over medium-high heat.
Brown the moose meat in the pot for about 3-4 minutes on each side.
Slice two small onions (or one large onion) and set aside.
Add more olive oil (3-5 tablespoons) to the pot after browning the moose.
Add a heaping tablespoon of tomato paste to the pot and stir.
Add a 28-ounce can of crushed tomatoes and a 28-ounce can of water to the pot.
Bring the mixture to a boil and stir.
Season with salt, about a teaspoon of cinnamon, and black pepper.
Transfer the sauce from the pot into the slow cooker with the moose meat.
Cover and cook on low for 6 hours until the moose is tender.
Serve the moose with crusty bread, pasta, rice, or couscous.
