Whole wheat flour adds fiber and nutrients.
Start by whisking together 3 cups of all-purpose flour, 1 cup of sugar, 1/2 teaspoon of salt, and an entire freshly ground nutmeg.
Grate 8 ounces of frozen butter (2 sticks) into the flour mixture.
Stir the grated butter into the flour until it remains distinct and does not melt into the flour.
Add 1/2 cup of ice water and stir until a loose dough begins to form.
Knead the dough until it starts to come together and form a solid ball.
Flour your hands, work surface, and rolling pin, then roll out the dough.
Fit the dough into a standard muffin pan, forming pleats on one side of each tart shell.
In a separate bowl, crack a couple of eggs and add 1/2 cup of maple syrup, 1/2 cup of brown sugar, and 2 teaspoons of vanilla, mixing until combined.
Melt the butter and pour it into the filling mixture, ensuring to scrape every last drop from the pan.
Add 2 tablespoons of flour to the filling to help hold it together as it bakes.
Pour the filling into the prepared tart shells.
Bake the butter tarts for 15 minutes until set.
