Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
Add cubed beef and brown on all sides, about 5-7 minutes.
Incorporate diced tomatoes and chopped bell peppers; cook for another 5 minutes.
Season with salt, black pepper, coriander, thyme, and bay leaves.
Pour in enough water to cover the meat; bring to a boil.
Reduce heat to low, cover, and simmer for 1.5-2 hours until beef is tender.
Add diced carrots and potatoes; cook for an additional 20-30 minutes until vegetables are tender.
Stir in green beans and chopped scotch bonnet pepper; simmer for 5 more minutes.
Adjust seasoning to taste before serving.
