Steam 650g of chopped yam in a wok for 25 minutes until soft.

Remove the yam and blend it to create a yam paste or purée.

Steam 150g of pumpkin or butternut squash and a handful of gingko nuts for 15 minutes until softened.

Mash the squash with the back of a fork until slightly pasty.

In a saucepan, fry 2 chopped shallots in lard oil until golden brown to make shallot oil, then strain it.

In a hot wok, add a few teaspoons of shallot oil and the yam paste, stirring until the yam absorbs the oil.

Add 2 to 3 tablespoons of raw sugar to the yam paste, adjusting sweetness as desired, and cook until smooth and glossy.

In another saucepan, cook 3 tablespoons of coconut milk with 1/3 teaspoon of salt until it bubbles at the sides, then turn off the flame.

Pour the yam paste into a bowl, garnish with butternut squash mash and gingko nuts, and add a dash of coconut milk.
