Churrasco with Chimichurri

2 lbs. Skirt Steak
12 Garlic Cloves
2 cups Orange Juice
1 1/2 cups bowl & basket Olive Oil
1/2 cup Water
2 Serrano Chiles
2 cups Chopped Parsley
2 tbsp bowl & basket Red Wine Vinegar
Zest and Juice from 2 Limes
1 tsp Red Chili Flakes

Marinate the Steak, combine 6 garlic cloves, orange juice, ½ cup olive oil, water, and chiles in a blender or food processor. Blend until smooth.

Place the steak in a container with a lid or a Ziploc bag. Add the marinade, seal, and refrigerate for 1 hour.

Prepare the Chimichurri: In a food processor, combine the remaining 6 garlic cloves, 1 cup olive oil, red wine vinegar, parsley, lime juice and zest, and red chili flakes. Pulse until desired consistency is reached.

Season with salt and pepper to taste.

Preheat the grill to 450°F and oil the grates.

Remove the steak from the marinade and pat dry. Season with salt and pepper.

Grill the steak for 2-3 minutes per side for medium doneness.

Remove from the grill and cover loosely with foil to rest.

Slice the steak and serve with the chimichurri sauce on top.
