Marinate lamb chops in olive oil, minced garlic, chopped rosemary, thyme, salt, black pepper, lemon juice, honey, mustard, paprika, and cumin for at least 1 hour.

Preheat the grill to medium-high heat (about 400°F).

Remove lamb chops from marinade and shake off excess.

Place lamb chops on the grill and cook for 4-5 minutes on one side until browned.

Flip lamb chops and cook for another 4-5 minutes for medium-rare, or longer for desired doneness.

Remove lamb chops from the grill and let rest for 5 minutes before serving.
