1 egg
2 cloves garlic
¼ cup Red wine vinegar
1 tsp mustard
2 cups olive oil
1 tbsp fresh parsley
1 tsp fresh thyme
1 tsp fresh oregano
1 tsp fresh sage

Add all ingredients except olive oil to a large cup.

Use an immersion blender to start mixing.

Slowly add olive oil while mixing to emulsify ingredients.

Pre-heat your oven to 350°F.

Add about a 1/4 stick of butter to your aioli, at room temperature.

Rub your chicken inside and out with the aioli, ensuring to get it in between the skin and the chicken breast.

Roast for approximately 1 hour, or until chicken is fully cooked.

Let rest for 5-10 minutes before cutting into the bird.
