3/4 cup Mayonnaise
2 large Cloves Garlic
1/4 cup Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
Generous Pinch of Sea Salt
Generous Pinch of Cayenne Pepper

Crush the garlic on a cutting board with the back of a knife. Alternatively, use a mortar and pestle if you have one.

Add the salt then finely mince or pound the garlic into a smooth of a 'paste' as you can get it.

Add the mayonnaise to a bowl, then add the garlic on top (no need to transfer it out of the mortar and pestle, if that's what you're using).

Stir until smooth.

Add the oil in a slooooow and steady stream.

Stirring (or pounding) until the mixture is thick and creamy.

Stir in the lemon juice.

Add the cayenne pepper and more salt, if needed.

Stir until smooth. Refrigerate, until chilled, before serving.
