Activate the yeast by mixing it with 2 tbsp of sugar and 1/2 cup of warm water in a medium bowl, let it foam for 5-10 minutes.

Add 2 cups of all-purpose flour, 1 cup of semolina, 1 tsp of baking powder, 1 tsp of salt, and 2 cups of water to the activated yeast and whisk until smooth.

Cover the batter with plastic wrap and let it rest for 30 minutes to 1 hour until bubbly and fluffy.

Transfer the batter into a measuring cup for easier pouring.

Heat a flat non-stick shallow pan over medium heat and spray with non-stick cooking spray or spread butter.

Pour approximately 1/4 cup of batter in the center of the pan to form a 4-inch diameter pancake and cook until bubbles form and the top dries out, about 2-3 minutes.

Place the cooked pancakes on a large flat tray with the golden side down, ensuring they do not stick together.

Prepare the filling by mixing 1 cup of chopped walnuts with 2 tsp of sugar.

Fill half of the pancakes with 1-2 tsp of walnut filling and fold them in half, pinching the edges to seal.

Heat 1 inch of canola oil in a frying pan over medium heat for frying.
