Qatayef

Qatayef is a beloved dessert originating from the Levantine region, particularly popular during Ramadan. Traditionally served during the month of fasting, these stuffed pancakes symbolize celebration and community. 2 cups flour
1/2 cup semolina
1/2 tsp baking powder
1 tsp yeast
2 tbs sugar
3 cups of warm water
1/4 tsp Sodium bicarbonate
3 cups sugar
2 cups of water
1 cinnamon stick
1 tsp Lemon juice
1 cup of nuts of your choice
2 tbsp Powdered sugar
1 tbsp Blossom water
1 tbs Oil or ghee
1 tsp honey
2 tbsp shredded coconut

Put the sugar and water (without stirring) on medium heat. Once it boils, add the cinnamon stick and lemon juice and let it simmer for 10 minutes. Then remove the syrup from the heat and let it cool down.

Chop the nuts in a food processor for only 10 seconds. Then add the sugar, coconut, blossom water, oil, honey and stir the mixture well.

Heat a pan on medium heat.

Mix all the dry ingredients except for the baking soda, then add warm water and mix for 30 seconds, then add the baking soda and mix for 5-10 seconds.

Pour the dough in different sizes onto the preheated pan, the dough begins to cook from the center first, then the edges.

Add some of the nut filling in the Qatayef & close it. It can be fried in hot oil and then dipped in the cold syrup while it is hot, or the qatayef can be broiled in the oven for 2-3 minutes, then turned on the other side and broiled again for 2-3 minutes.
