Pan Seared Lamb Chops

1 lb bone-in lamb chops (frenched & trimmed)
Salt
Freshly ground pepper
2 tablespoons olive oil
3 sprigs fresh rosemary
1/2 teaspoon crushed red pepper flakes
7 garlic cloves (halved)
1 tablespoon cold butter (cubed into four pieces)

Season both sides of all chops with salt and fresh pepper.

Turn your stovetop to medium high heat and in a large skillet or cast iron skillet add in your olive oil; let the oil become hot but not smokey.

Add the rosemary, red pepper flakes, garlic, and lamb chops.

Cook for 2-3 minutes or until the bottom is seared and brown. Flip to the other side and add in your cubed butter; cook for another 2-3 minutes.

Plate your lamb chops and serve immediately.
