Heat milk to 43°C (110°F) and add yeast, letting it sit for 5-10 minutes until bubbly.
Mix sugar and salt into the flour in a bowl.
Add flour mixture to a mixer with the egg and mix on low speed.
Pour in the milk and yeast mixture and mix for 8-10 minutes, scraping the bowl as needed.
Slowly add room temperature butter and mix for an additional 3-4 minutes until incorporated.
Cover the dough with a damp towel and let it rise in a warm spot for 1 hour.
Prepare the sugar mixture by mixing brown sugar, cinnamon, and lemon zest in a bowl.
After the dough has risen, flour the workspace and divide the dough into 12 equal pieces, rolling each into a ball and coating in the sugar mixture.
Let the dough balls rest for 15 minutes, covered with a damp towel.
Roll each ball into a long rope, shape it, and place it on a cookie sheet lined with parchment paper.
Cover the shaped bololises with a damp towel and let them rise for 60 minutes.
Preheat the oven to 250°C (480°F) and bake the bololises until golden.
