Today, variations abound, including this keto-friendly version that caters to low-carb diets while maintaining the rich flavors of traditional chili.

Dice half of a large onion, cutting off the ends, slicing in half, peeling the skin, and dicing it.
Mince 8 cloves of garlic by cutting off the root end, smashing with a knife, and slicing thinly before mincing.
Heat a large skillet over medium-high heat and add olive oil.
Add the chopped onion to the skillet and sauté for about 5 to 7 minutes until translucent.
Add minced garlic to the skillet, making space in the middle, and sauté for about 1 minute until fragrant.
Add 2.5 pounds of ground beef to the skillet, breaking it apart with a wooden spoon, and cook for 8 to 10 minutes until browned, ensuring moisture evaporates.
Transfer the beef mixture to a slow cooker.
Add 2 (15-ounce) cans of diced tomatoes with liquid, 1 (6-ounce) can of tomato paste, and 1 (4-ounce) can of green chilies with liquid to the slow cooker.
Add 2 tablespoons of Worcestershire sauce, 1/4 cup of chili powder, 2 tablespoons of cumin, 1 tablespoon of dried oregano, 1 teaspoon of black pepper, and 2 teaspoons of sea salt to the slow cooker.
Stir all ingredients in the slow cooker until smooth, and place a bay leaf in the center.
Cover the slow cooker and cook for 6 to 8 hours.
Remove the bay leaf before serving and stir the chili to ensure it's uniform.
Slice avocado and green onions for toppings, and prepare to serve the chili with a dollop of sour cream and shredded cheese.
