Parsley provides a similar freshness, while green onions add a mild onion flavor.

1

Wash 5 tomatoes and place them in a pot with a yellow bell pepper, 1/2 onion, and a guaque chili with seeds removed.

2

Add 1/2 cup of water, cover, and bring to a boil for 5 to 8 minutes until the tomato skins start to peel off.

3

Transfer all ingredients to a blender and blend well.

4

Return the mixture to the pot, strain it, and add 1 teaspoon of oil.

5

To thicken the sauce, mix 1 teaspoon of cornstarch with 2 tablespoons of water and add it to the sauce along with salt and parsley.

6

Let the sauce cool, then add your choice of meat (chicken or pork) and set aside.

7

In a mixing bowl, combine 4 cups of masa harina with 5 cups of water and season with salt, mixing well.

8

Add 1 cup of butter and 1 cup of oil to the masa mixture and mix thoroughly until it no longer sticks to your hands.

9

Let the masa rest for a while.

10

Prepare corn husks by soaking them in hot water for 20 minutes and then draining them.

11

Form a tortilla from the masa, add some meat and a little sauce, and fold it tightly, ensuring minimal sauce leaks out.

12

Wrap each chuchito in aluminum foil if the corn husks are too small to cover them completely.

13

If you don't have good corn husks, you can use kitchen plastic or paper to wrap them instead.

14

Once all chuchitos are prepared (about 15 to 20 depending on size), place them in a steamer.

15

Cover the chuchitos with a bag or lid to keep them from moving around.

16

Steam for about 1.5 hours, checking the water level every 20 minutes to ensure it doesn't run dry.
