Heat a skillet over medium-low heat and add 3 tablespoons of oil.
Add 1/2 medium onion and sauté until translucent.
Slice 2 serrano peppers and add them to the skillet with the onions.
Add 2 large minced garlic cloves and sauté for about 30 seconds.
Add 4 diced Roma tomatoes, 1/4 teaspoon ground cumin, salt, and pepper to the skillet.
Add 1/4 cup water and let it simmer on low heat, mashing it lightly for a smoother salsa.
In a separate skillet, heat oil and fry the tortillas until golden brown and crispy, then set aside.
In another skillet, add 2 tablespoons of bacon grease and 2 tablespoons of chopped onions, sauté until sizzling.
Add black beans and mash them, heating until warm.
In a large skillet, heat oil on low and crack in the eggs, cooking them over easy as preferred.
Assemble by spreading beans on the tostadas, adding eggs, topping with salsa, avocado, and queso fresco.
