Preheat the oven to toast the tortilla chips.
Toast the tortilla chips in the oven until they are crispy.

In a pan, sauté onions and garlic until fragrant.
Add jalapeño to the pan and cook until soft.
Add a can of black beans and hot sauce to the pan.
Stir in cumin and a splash of lime juice to the beans.
Microwave the lime for 10 seconds to extract more juice if needed.
In another pan, brown and crumble chorizo until cooked through.
For the salsa, seed and stem the chili peppers and place them in a pot with enough stock to cover.
Add orange rind to the pot and simmer to reconstitute the peppers.
Blend the chili mixture in a food processor until smooth.
Add the chili puree to the sautéed onions and garlic.
Juice another lime into the salsa mixture and stir in fire roasted tomatoes.
Add a pinch of smoked cinnamon to the salsa and let it thicken.
In a separate pan on low heat, add a dab of butter and crack an egg into it.
Cover the pan and let the egg cook gently until desired doneness.
Assemble the nachos by layering cheesy chips, refried beans, chorizo, and salsa.
Top the nachos with a cooked egg, cilantro, avocado, pickled onions, jalapeños, and sour cream.
