Za’atar & Cheese Manakish

Cultural Context

Originating from Lebanon, manakish is a beloved street food often enjoyed for breakfast or as a snack. The combination of za’atar, a fragrant herb blend, and cheese creates a delightful savory flavor that is both comforting and satisfying. Today, manakish has gained popularity beyond Lebanon, with variations appearing in many Middle Eastern and Mediterranean cuisines.

1

Combine warm water, yeast, and sugar in a bowl; let sit until frothy, about 5-10 minutes.

2

In a large mixing bowl, combine flour and salt; create a well in the center.

3

Pour the yeast mixture and olive oil into the well; mix until a dough forms.

4

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

5

Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled, about 1-2 hours.

6

Preheat the oven to 475°F (245°C) and line a baking sheet with parchment paper.

7

Punch down the risen dough and divide it into equal portions.

8

Roll each portion into a flat circle about 1/4 inch thick.

9

Spread a layer of yogurt over each circle, leaving a small border.

10

Sprinkle za’atar evenly over the yogurt, followed by crumbled feta and shredded mozzarella.

11

Drizzle with olive oil and sprinkle with sesame seeds and black pepper.

Bake in the preheated oven for 10-12 minutes until the edges are golden and cheese is bubbly.
