2 tbs sesame seeds
3 tbs sumac powder
2 & ½ tbs dried thyme
2 & ½ tbs dried oregano
1/4 tsp salt
½ tsp black pepper powder
½ cup olive oil
1 cup lukewarm water
2 tsp instant yeast
1 & ½ tbs sugar
2 cups all-purpose flour
½ tsp salt
1 & ½ tbs olive oil
3-4 tbs all-purpose flour (as required)

In frying pan, add sesame seeds and roast until fragrant.

In mortar & pestle, add roasted sesame seeds and crush coarsely.

In a bowl, add coarsely grounded sesame seeds, sumac powder, dried thyme, dried oregano, salt, black pepper powder and mix well.

Add olive oil, mix well & set aside.

In a small jug, add lukewarm water, instant yeast, sugar and mix well, cover and let it rest for 10-15 minutes.

In a bowl, add all-purpose flour, salt, olive oil and mix well.

Add yeast mixture, mix well and knead until dough is formed.

Grease dough with olive oil, cover and let it rest for 1 hour (in a warm place).

Sprinkle flour, knead dough again and divide into 4 equal parts.

Take one part, make a ball and roll out with the help of a rolling pin.

Place rolled dough on greased baking tray and prick with fork.

Add & spread prepared sesame seeds mixture (makes 4).

Bake in preheated oven at 180°C for 6-8 minutes.

Cut into slices & serve!
