500 g lamb
1 large onion minced
3 to 4 cloves garlic minced
2 tbsp olive oil
1 tbsp paprika (optional)
salt and black pepper to taste
2 tbsp flour
fresh or dried herbs (rosemary, thyme, or oregano)
2 cups plain yogurt (preferably full fat, strained)
2 large eggs
1 tbsp flour (for yogurt mixture)
water or stock (to create sauce)

Heat the olive oil in a large frying pan over medium heat.

Add the lamb pieces and brown on all sides for about 5 to 7 minutes.

Remove the lamb from the pan and set aside.

Add the minced onion and minced garlic to the same pan and sauté for 3 to 4 minutes until softened and translucent.

If using, add the paprika, salt, pepper, and herbs, and stir to combine.

Sprinkle the flour over the onion and garlic mixture, stir well to coat, and cook for another minute.

Gradually add water or stock, stirring to create a smooth sauce, and let simmer for 5 to 10 minutes to thicken slightly.

Return the lamb pieces to the pan and stir in the sauce, cover, and cook over low heat for about 30 to 40 minutes until the lamb is tender.

Preheat the oven to 180°C (350°F).

Transfer the lamb and sauce to a deep round baking dish.

Pour the yogurt mixture (2 cups yogurt, 2 large eggs, 1 tbsp flour, salt, and pepper) over the lamb and spread evenly.

Bake in the oven for 45 minutes to 1 hour until the top is golden brown and cooked through.
