Traditionally served during celebrations and gatherings, this moist semolina cake is soaked in a sweet syrup, making it a delightful treat. Preheat the oven to 180°C (350°F).
Grease a baking dish with butter.
Mix semolina, sugar, and baking powder in a bowl.
Whisk eggs in a separate bowl until frothy.
Combine yogurt, vanilla extract, and lemon zest with the eggs.
Gradually add the dry mixture to the wet ingredients, stirring until smooth.
Pour the batter into the prepared baking dish.
Bake for 30-35 minutes until golden and a toothpick comes out clean.
While the cake bakes, prepare the syrup by boiling water and sugar together until dissolved.
Add lemon juice and orange juice to the syrup, mixing well.
Once the cake is baked, remove it from the oven and immediately pour the syrup over it.
Let the cake absorb the syrup for at least 30 minutes before serving.
Garnish with powdered sugar and coconut flakes before serving.
