Small dice a yellow onion and set aside.
Mince garlic and set aside.
In a Rondell pot over medium heat, add olive oil and the diced onion. Cook until slightly brown, about 3-4 minutes.
Add minced garlic and stir until fragrant, then reduce heat to prevent burning.
Add chicken stock (or vegetable stock/water) and bring to a boil.
Once boiling, gradually whisk in yellow cornmeal, stirring continuously to prevent lumps.
Cook for 15-20 minutes on medium-low heat, whisking constantly until polenta is al dente.
Stir in whole unsalted butter until melted and combined.
Add grated fresh Parmesan cheese and whisk until smooth.
Season with sea salt and fresh cracked black pepper to taste.
Transfer polenta to a serving bowl and top with shredded Parmesan cheese and finely chopped Italian flat leaf parsley.
