Preheat the oven to 225°C.
Place the marrow bones in a baking dish.
Pour a dash of olive oil over the marrow bones.
Sprinkle the marrow bones with salt, pepper, thyme, rosemary, Mirador, and garlic powder.
Place the baking dish in the oven at a medium height for about 30 minutes.
While the marrow is baking, peel the potatoes and cut them into large pieces.
Place the potato pieces in a casserole and cover with water.
Add salt to the water and bring it to a boil.
Boil the potatoes for 10-15 minutes or until they can be pierced easily with a toothpick or knife.
Remove the marrow from the oven when ready.
Discard the water from the boiled potatoes and place the potatoes in a bowl.
Mash the potatoes and add the marrow.
Remove the marrow from the bones using a spoon or the thin part of a spoon.
Mix the mashed potatoes and marrow well.
Add a splash of milk to the mixture.
Season with salt, pepper, thyme, rosemary, Mirador, and garlic powder to taste.
Taste the mixture and add more salt if needed.
Serve the mashed potatoes with any meat or vegetables.
