Start by making the dough: combine 2.5 cups all-purpose flour, 0.5 teaspoon salt, and 0.75 cup warm water in a blender.

Blend until a dough ball forms, then knead for 1-2 minutes until smooth.

Shape the dough into a disc, place it on a plate, cover with a clean kitchen towel, and let it rest for 20-30 minutes.

Prepare the filling by rehydrating 0.75 cup of textured vegetable protein with 0.75 cup of water for 10 minutes.

In a food processor, combine the rehydrated textured vegetable protein, low sodium soy sauce, sesame oil, cabbage blend, 2 roughly chopped green onions, garlic powder, and ginger powder. Pulse until crumbly.

Divide the rested dough into halves and roll out one half on a floured surface until thin.

Cut the rolled dough into a rectangle, then into 4 columns, each about 3.5 inches wide, and then into 3 rows to create square wrappers.

Dust the cut wrappers lightly with cornstarch to prevent sticking.

Take about half a heaping teaspoon to one teaspoon of filling and place it on a wrapper. Lightly moisten the edges with water, fold over to seal, and shape into a wonton.
