1

Start by making the wonton wrappers: Combine 400 g flour and 2 g salt in a bowl.

2

Add 1 egg and mix in a stand mixer on medium speed, gradually adding water until the dough comes together but remains crumbly.

3

Once mixed, turn the dough out onto a lightly floured cutting board and bring it together, adding more flour if it sticks to your hands.

4

Let the dough rest for around 30 minutes.

5

After resting, dust the dough and divide it into approximately six portions.

6

Use a pasta attachment to roll out the dough into thin sheets, dusting with corn starch as needed.

7

Cut the rolled dough into squares using a template.

8

Prepare the filling by combining finely ground pork, onions, salt, sugar, black pepper, and oyster sauce in a bowl.

9

Mix the filling ingredients together thoroughly.

10

Make a glue with corn starch and water, stirring until dissolved.

11

Take a spoonful of filling and place it in the center of a wrapper.

12

Fold the corner of the wrapper facing you over the filling, rolling it away from yourself to form a triangle.

13

Fold the sides of the triangle underneath the filling and apply the glue to the tip, joining it together.

14

For the soup base, roast chicken bones and wings, carrots, onions, ginger, and wine in the oven.

15

After roasting, sauté the carrots, onions, and ginger in the chicken fat, then add the roasted chicken and water, bringing it to a boil.

16

Reduce the heat to a simmer and skim the broth, cooking for around 6 hours before straining.

17

Season the strained broth with salt, sugar, and fish sauce for extra umami.

18

In a large pot of boiling water, drop the wontons in and cook until they float to the surface, about 5 minutes.

19

Serve the wontons in a bowl filled with the soup and garnish with chili, chili oil, cilantro, fried garlic, and ramps leaves.
