1

Blanch fresh baby bok choy in simmering water for less than a minute, then remove and shock it in cold water.

2

Cube and chop pork to create a ground pork paste, or use pre-ground pork.

3

Chop shrimp and mix it with the pork.

4

Add shaoxing cooking wine, sesame oil, soy sauce, white pepper, ginger paste, garlic paste, scallions, and corn starch to the meat mixture and combine well until it has a thickened paste texture.

5

Place about a teaspoon of the filling in the center of a wonton wrapper, wet the edges with water, and fold it over to seal.

6

Alternatively, gather the edges of the wrapper to form a purse shape with the filling inside.

7

Repeat the process to fill all wonton wrappers.

8

In a pot, add store-bought chicken broth and some water for extra soup.

9

Add the whites of several scallions and one mashed clove of garlic to the broth, along with soy sauce, shaoxing cooking wine, sugar, and a pinch of salt, then combine.

10

Bring the broth to a gentle simmer for about 10 minutes, then remove the scallions and garlic.

11

Add the blanched bok choy and the wontons to the pot of broth, or boil the wontons separately in the water used to blanch the bok choy for several minutes until they float to the surface.

12

Shock the cooked wontons in an ice bath to maintain their texture before serving.

13

Serve the wontons and bok choy in bowls and ladle hot broth over them.
