3 cups water
1/2 cup light soy sauce
1 1/2 tsp dark soy sauce
1/4 cup rice vinegar
3 tbsp brown sugar
1 1/2 tsp black peppercorns
5 bay leaves

Cut the pork into 6cm cubes.

Heat the oil in a large heavy-based pot on high heat and brown the pork on all sides in two batches, then remove.

Add the water, light soy sauce, dark soy sauce, rice vinegar, brown sugar, black peppercorns, and bay leaves to the pot.

Return the pork to the pot, bring to a boil, then reduce heat to a gentle simmer and partially cover with a lid.

Cook for 1.5 to 2 hours until the pork is fork tender.
