Fatteh Tiseyah is a beloved dish in Syria, traditionally served during festive occasions and family gatherings. It combines layers of crispy pita, chickpeas, and a rich yogurt sauce, showcasing the harmony of flavors and textures that define Middle Eastern cuisine. Today, variations of Fatteh can be found throughout the Levant, each region adding its own twist, making it a cherished comfort food across cultures.

Soak dried chickpeas overnight in cold water with a little bit of baking soda.
Drain the soaked chickpeas and put them in a big pot with fresh water, then simmer until soft.
Toast pita bread in the oven or air fryer until crispy.
In a food processor, combine tahini, lemon juice, garlic, and salt, and pulse until creamy.
Dilute the tahini mixture with some of the cooking liquid from the chickpeas until the desired consistency is reached.
In a preheated casserole dish, layer the toasted pita bread chips and some cooking liquid and extra chickpeas.
Mix the layers well until the bread is soaked.
Add more chickpeas on top and finish with the tahini mixture as the final layer.
Decorate with pomegranate seeds, parsley, cumin, and paprika.
