Take a bowl and add 5 tbsp of low sodium soy sauce, optional hot sauce, 2 tsp of minced garlic, 2 tbsp of honey, 1.5 tsp of ground ginger, 1 tbsp of sesame seeds, and 1 tbsp of cornstarch mixed with 2 tbsp of cold water.

Mix all the ingredients in the bowl until combined.

In a large bowl, add 2 lbs of chopped chicken thighs.

Season the chicken with a little salt and pepper and add 2 tbsp of cornstarch.

Mix everything around using your hands for easier coating.

Turn on the burner to medium heat and take out a stovetop pan.

Add 2 tbsp of toasted sesame oil to the pan and let it heat up.

Once heated, add in the chicken mixture and let it cook for a couple of minutes.

Flip the chicken over once it looks cooked on one side and continue cooking until both sides are cooked through.

Pour in the sauce mixture and let it simmer for a few minutes or until the sauce thickens up, knowing it's done when it looks thick and glossy.
