3 tablespoons sweet chili sauce
4 tablespoons tomato ketchup
3 tablespoons light brown sugar
3 tablespoons light soy sauce
3 tablespoons dark soy sauce

Add 3 tablespoons of cornstarch to a medium-sized bowl.

Add 1/4 teaspoon each of salt and pepper, and 1/2 teaspoon each of garlic powder and paprika to the bowl and mix together.

Add 600 grams of chopped skinless boneless chicken thigh fillets to the bowl and mix to coat the chicken in the cornstarch mixture.

Drizzle 3 tablespoons of oil over the chicken and mix again until well coated and sticky.

Place the chicken in the air fryer basket and cook at 190°C (375°F) for about 15 to 18 minutes until fully cooked and no longer pink in the middle.

Shake the air fryer basket 2-3 times during cooking to ensure the chicken is crispy and doesn't stick together.

In a large bowl, add 1.5 tablespoons of sesame oil, 1 teaspoon of garlic powder, 1.5 tablespoons of Chinese rice vinegar, 3 tablespoons of honey, 3 tablespoons of sweet chili sauce, 4 tablespoons of tomato ketchup, 3 tablespoons of light brown sugar, 3 tablespoons of light soy sauce, and 3 tablespoons of dark soy sauce; stir to combine.

Microwave the sauce for about 3 to 4 minutes, stirring every minute until hot and slightly thickened.

Once the chicken is done, transfer it to the bowl with the sauce and toss to coat thoroughly.

Serve the chicken on top of egg fried rice, sprinkled with sesame seeds and chopped spring onions.
