1 Tbsp Light Soy Sauce
1 Tbsp Shaoxing Wine
½ tsp Salt

1 Tbsp Dark Soy Sauce
2 ½ Tbsp Honey
1 Tbsp Brown Sugar
1 ½ Tbsp Rice Vinegar
1 Tbsp Shaoxing Wine (Optional)
3 Garlic Cloves, Finely Minced
15g Fresh Ginger, Finely Grated
¾ Cup Chicken Stock
1 tsp Sesame Oil
1 ½ Cups Jasmine Rice, Washed
550ml Cold Water
2 Spring Onions, Whites Finely Sliced (Greens Reserved)
1 tsp Sesame Oil
Spring Onion Greens (From Above)
1 Tbsp Toasted Sesame Seeds

Prepare the chicken by dicing it into small pieces and marinating with bicarbonate of soda, light soy sauce, shaoxing wine, salt, and ground white pepper.

In a pan, combine the ingredients for the sesame glaze: light soy sauce, dark soy sauce, honey, brown sugar, rice vinegar, optional shaoxing wine, minced garlic, grated ginger, chicken stock, and sesame oil. Cook until the glaze thickens.

Cook the jasmine rice by rinsing it and then boiling it with cold water and a bit of salt until fluffy. Stir in the sliced spring onion whites and sesame oil.

In a separate pan, cook the marinated chicken until tender and fully cooked, then toss it in the sesame glaze until well coated.

Serve the sesame chicken over the spring onion rice, garnished with spring onion greens and toasted sesame seeds.
