Chop up a half a bunch of green onions or scallions.

Mince three cloves of garlic finely.

Chop two large boneless skinless chicken breasts into bite-sized chunks.

Prepare a marinade with three tablespoons of low-sodium soy sauce, two teaspoons of toasted sesame oil, and two teaspoons of honey.

Pour the marinade into a gallon-sized Ziploc bag, add the chicken, remove the air, and toss to coat.

Refrigerate the marinated chicken for twenty to thirty minutes.

Prepare the sauce by combining one and a half cups of chicken broth, two tablespoons of low-sodium soy sauce, one tablespoon of rice wine vinegar, one-fourth teaspoon of ground ginger, three tablespoons of white sugar, and one tablespoon of cornstarch in a bowl and whisk together.

Heat a couple of teaspoons of olive oil in a large skillet over medium-high heat.

Using a slotted spoon, remove about half of the marinated chicken and place it into the hot skillet, cooking in batches to avoid crowding.

Cook the chicken until it is cooked through and browned, then remove it to a plate and chop into smaller pieces if desired.

Wipe out the skillet and add another couple teaspoons of olive oil, then add the white parts of the green onions, half of the green parts, chopped garlic, and a sprinkling of red pepper flakes.

Whisk the sauce again to redistribute the cornstarch and pour it into the skillet while stirring to avoid lumps.

Cook the sauce until it starts to thicken, then add two more teaspoons of toasted sesame oil (optional).

Add the cooked chicken back into the skillet and stir to coat in the sauce.

Garnish with the remaining green parts of the scallions and a sprinkling of sesame seeds.
