Preheat the oven to 350° and grease two 9-inch round cake pans.

Optionally flour the cake pans or use unsweetened cocoa powder and line with parchment paper.

In a mixing bowl, combine 2 cups of sugar, 1 and 3/4 cups of flour, 3/4 cups of unsweetened cocoa powder, 1 and 1/2 tsps of baking soda, 1 and 1/2 tsps of baking powder, and 1 tsp of salt.

Add 2 eggs, 1 cup of milk, 1/2 cup of vegetable oil, and 2 tsps of vanilla extract to the dry ingredients.

Beat the ingredients with an electric mixer for 3 minutes until well combined.

Pour in 1 cup of freshly brewed strong coffee into the batter and stir by hand.

Divide the cake batter evenly between the two prepared pans.

Bake in the preheated oven for 30 to 35 minutes, checking for doneness with a toothpick.

Cool the cakes for 10 minutes before running a butter knife along the edges and removing them onto a cooling rack.

Alternately beat in 1 and 1/2 cups of unsweetened cocoa powder and 5 and 1/3 cups of confectioners' sugar, followed by 2/3 cups of milk.

Add 1 tsp of vanilla extract and beat to a spreading consistency, adjusting with more milk if too thick.

Once the cakes have cooled completely, split each one horizontally using a long serrated knife.

Spread chocolate frosting between the cake layers and stack them on top of each other.
