Preheat the oven to 350 degrees.
Cut the English muffins in half using a serrated knife.
Brush melted butter over the cut sides of the muffins.
Place the muffins in the preheated oven until toasted.
In a bowl, crack about 8 eggs and add a spoon of sour cream, 1/3 cup of milk, and a handful of cheddar cheese.
Season the egg mixture with salt, pepper, garlic powder, and onion powder to taste.
Mix everything together until combined.
Pour the egg mixture into a large cast iron casserole pan.
Top the egg mixture with a little more cheese.
Place the casserole pan in the oven for about 20 minutes, until the eggs are firm and no longer runny on top.
Remove the eggs from the oven and let them cool for a few minutes.
Cut the cooked eggs into circles to fit the muffins.
Place a slice of cheese on each toasted muffin half.
Add a slice of ham on top of the cheese on each muffin half.
Assemble the sandwiches by placing the egg circle on top of the ham and cheese.
Cut parchment paper into smaller pieces and place them between each sandwich to prevent sticking when freezing.
Place the sandwiches in a gallon Ziploc freezer bag, labeling it with the date to eat by.
Store any remaining sandwiches in a quart size Ziploc bag in the fridge for immediate consumption.
For reheating, remove a sandwich from the freezer the night before or reheat straight from the freezer in a preheated Ninja Foodi air fryer at 375 degrees for 3-6 minutes.
