  • 4 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup shredded cheese (optional)

Instructions

  1. 1In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  2. 2In a non-stick skillet, melt the butter over medium heat.
  3. 3Add the diced bell peppers and onions to the skillet and sauté for about 3-4 minutes until they are softened.
  4. 4Pour the egg mixture into the skillet with the sautéed vegetables.
  5. 5Allow the eggs to cook undisturbed for a minute, then gently stir with a spatula, pushing the eggs from the edges to the center.
  6. 6Continue to cook, stirring occasionally, until the eggs are just set but still slightly runny.
  7. 7If using cheese, sprinkle it over the eggs and let it melt for about a minute.
  8. 8Remove from heat and serve immediately.
