Corned Beef and Cabbage

Cultural Context

Corned Beef and Cabbage has its roots in Irish cuisine, traditionally served during St. Patrick's Day celebrations. The dish symbolizes the Irish-American experience, where corned beef became a substitute for bacon due to its availability. Today, it is enjoyed not only in Ireland but also in various parts of the world, especially in the United States, where it has become a beloved comfort food.

IEIEmain
6 servings
Servings4
8 to 10 baby potatoes
1 and 1/2 cups baby carrots
2 ribs celery
1 onion
3 cloves garlic
5 to 6 lb corned beef brisket
liquid from corned beef package
2 tablespoons pickling spice
2 to 4 cups beef broth
1 small to medium cabbage
1

Spray a 6-quart slow cooker with non-stick cooking spray or use a plastic liner.

2

Add 8 to 10 whole baby potatoes with skin on to the bottom of the slow cooker.

3

Add 1 and 1/2 cups of baby carrots to the slow cooker.

4

Trim and cut 2 ribs of celery into 3-inch pieces and add to the slow cooker.

5

Peel and quarter 1 onion and add it to the slow cooker.

6

Add 3 cloves of garlic to the slow cooker without smashing them.

7

Open the package of corned beef brisket and include the liquid from the package.

8

Place the brisket fat side up on top of the vegetables in the slow cooker.

9

Sprinkle the packet of pickling spice from the corned beef package over the brisket.

10

Add an additional 2 tablespoons of pickling spice over the brisket for extra flavor.

11

Pour 2 to 4 cups of beef broth into the slow cooker until it reaches just at the top edge of the brisket, being careful not to wash off the spices.

12

Cover the slow cooker and cook on low for 8 to 9 hours.

13

After 8 hours, prepare the cabbage by trimming the bottom off and slicing it into 1-inch wedges, leaving the core intact.

14

Add the cabbage to the slow cooker, pressing it down into the liquid as much as possible.

15

Cover and cook for an additional hour or until the cabbage is tender to your liking.

16

Carefully remove the brisket from the slow cooker using two large spoons and transfer it to a cutting board.
