1.5 cups baby carrots
1/3 yellow onion
2 cloves garlic
1 bay leaf
1 tablespoon spicy brown mustard
12 ounces pale ale
1 small to medium head of cabbage

Prepare 3.8 pounds of corned beef with a good amount of marbling and fat cap.

Peel and cut 2 pounds of Yukon Gold potatoes in half or quarters, leaving them big.

Use 1.5 cups of baby carrots or 2-3 regular carrots, cut into chunks.

Cut half of a yellow onion into big chunks and separate the layers.

Layer the carrots, onion, and potatoes in the crock pot.

Add 2 cloves of peeled garlic to the crock pot.

Cook the corned beef in the crock pot for 8 to 10 hours on low.

Add 1 bay leaf to the crock pot.

Spread 1 tablespoon of spicy brown mustard over the fat cap of the corned beef.
