Place the brisket fat-side up in your slow cooker. Sprinkle in the spice packet.

Tuck onion, garlic, bay leaves, peppercorns, and mustard seeds around the meat. Pour in water or broth until brisket is just covered.

Cover and cook on Low for 8–10 hours (or High for 4–5 hours) until the brisket is tender.

In the last 2 hours of cooking (Low) or last 1 hour (High), nestle potatoes and carrots around the meat.

Add cabbage wedges on top for the final 30 minutes.

Remove meat to a cutting board, let rest 10 minutes, then slice thinly against the grain.

Arrange sliced corned beef on a platter with potatoes, carrots, and cabbage.

Spoon some cooking liquid over the top and sprinkle with fresh parsley.
