Sweet Potato Dahl

1 cup red lentils
4 cups water
2 organic sweet potatoes
1 red onion
1 teaspoon cumin
0.5 teaspoon mixed spice
1 teaspoon paprika powder
1 veggie stock cube
1 teaspoon turmeric
pinch of black pepper

Rinse 1 cup of red lentils and set aside.

Boil 4 cups of water in a pot.

Add the rinsed red lentils to the boiling water.

Grate 2 organic sweet potatoes using a box grater.

Chop 1 red onion, removing the outer skin and cutting into small cubes.

Add the chopped onion to the pot with lentils and water.

Stir in 1 teaspoon of cumin, 0.5 teaspoon of mixed spice, 1 teaspoon of paprika powder, and 1 veggie stock cube into the pot.

Add 1 teaspoon of turmeric and a pinch of black pepper to the pot.

Lower the heat and let the mixture simmer.

Grate fresh ginger and set aside for later use.

Grate garlic and set aside for later use.

Slice chili into small pieces and set aside for later use.

After about 10 minutes, check the consistency of the lentils and sweet potatoes; they should be cooked through.

At the end of cooking, stir in the grated ginger, garlic, and sliced chili.
