Sweet Potato Dahl

1 cup red lentils
2 medium sweet potatoes, peeled and diced
1 onion, chopped
2 cloves garlic, minced
1 inch ginger, grated
1 can coconut milk (400ml)
2 cups vegetable broth
1 tsp turmeric powder
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp chili powder
Salt to taste
2 tbsp olive oil
Fresh cilantro for garnish

Heat olive oil in a large pot over medium heat.

Add cumin seeds and let them sizzle for a few seconds.

Add chopped onion, garlic, and ginger. Sauté until the onion is translucent.

Stir in turmeric, coriander powder, and chili powder. Cook for another minute.

Add diced sweet potatoes and lentils to the pot. Stir well to combine.

Pour in the vegetable broth and coconut milk. Bring to a boil.

Reduce heat to low, cover, and simmer for about 25-30 minutes, or until the lentils and sweet potatoes are tender.

Season with salt to taste and stir well.

Garnish with fresh cilantro before serving.

Serve hot with rice or naan.
