Clafoutis hails from the Limousin region of France, where it was traditionally made with black cherries. This rustic dessert showcases the beauty of simple ingredients, combining fruit with a custard-like batter. Over time, variations have emerged using different fruits, but the classic cherry version remains a beloved favorite, especially in summer when cherries are in season.

Honey adds sweetness with a unique flavor.
Preheat the oven to 180°C for 15 minutes.
Line a ceramic mold with butter, coating it all around.
Sprinkle 1 tablespoon of sugar inside the mold.
Cut 500 g of persimmons into wedges about 1 cm thick and place them in a bowl.
Add 200 g of blackberries to the bowl with the persimmons.
Add the zest and juice of 1 lemon to the fruit and toss to combine.
Transfer the fruit mixture into the buttered and sugared mold.
In a bowl, whisk 4 eggs until slightly light and emulsified.
Add a cap full of vanilla extract to the eggs.
Mix in 0.5 cup of sugar granules, 1 cup of milk, and 0.5 cup of full fat cream into the egg mixture.
Gradually whisk in 0.75 cup of refined flour until smooth and free of lumps.
Pour the batter over the fruit in the mold, ensuring it fills the nooks and crannies.
Bake in the preheated oven at 180°C for about 45 minutes until set in the center.
Dust with icing sugar before serving.
