Wash the cherries and remove the pits using a sturdy straw.
Mix 1/8 pint of cognac with 56.7 grams of sugar and let it soak on the cherries for an hour.
Preheat the oven to 350°F (175°C).
In a blender, combine 237 milliliters of milk, 2 ounces of granulated sugar, 3 eggs, 1 tablespoon of vanilla extract, 1/8 teaspoon of salt, and 2.5 ounces of sifted flour; blend at high speed for one minute.
Butter a frying pan generously.
Pour a quarter inch layer of batter into the buttered frying pan and place it over moderate heat for 1-2 minutes until a firm batter has set at the bottom.
Spread the pitted cherries over the batter, adding the sugary cognac mixture on top.
Pour the remaining batter over the cherries, smoothing the surface with a spoon if possible.
Place the pan in the middle of the preheated oven and bake for roughly one hour until puffed and browned.
Check for doneness by inserting a knife; it should come out clean.
Dust with icing sugar before serving.
