Preheat the oven to 375°F.
Melt 6 tablespoons of butter.
Grease a baking dish liberally with a knob of butter.
Rinse the fresh cherries under cool water and pat them dry.
Pit the cherries and cut them in half.
In a mixing bowl, add 3 eggs at room temperature, 1 cup of unbleached all-purpose flour, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of almond extract, 1/4 teaspoon of kosher salt, 1/2 cup of granulated sugar, 1 cup of whole milk, and 1/4 cup of 35% cream.
Blend the mixture using an immersion blender or hand mixer until combined.
Add the 6 tablespoons of melted butter to the mixture and blend again to combine thoroughly.
Add the halved cherries to the greased dish, cut side down, about 2 cups worth.
Pour the custard mixture over the cherries.
Sprinkle about 1 teaspoon of granulated sugar on top.
Place the dish onto a parchment-lined baking tray and bake for 45 minutes.
Check if the custard is set by poking a knife into the center; it should come away clean.
Let the clafoutis cool for about 30 minutes before dusting with powdered sugar.
Cut into wedges, serving 8 to 12 portions, and transfer to dessert plates.
