Rinse the fresh cherries under cold water to clean them.
Pick off the stems from each cherry.
Pit the cherries using a cherry depitter or a paring knife.
Sweeten the cherries with about 3 tablespoons of sugar, adjusting based on their sweetness.
In a large bowl, combine whole milk, granulated sugar, all-purpose flour, sea salt, and vanilla extract.
Add four large eggs and one additional egg yolk to the mixture.
Whisk the batter until completely smooth, or blend in a blender for a quicker method.
Butter a 1.5-inch by 9-inch tart-style pan thoroughly with unsalted butter.
Spread the sugared cherries evenly in the bottom of the buttered pan.
Pour the batter over the cherries, filling the pan to the top.
Preheat the oven to 375°F (190°C).
Bake the clafoutis for about 40 minutes until the edges are brown and the center is set.
Remove from the oven and let cool on a rack for 20 to 25 minutes.
Dust with powdered sugar before serving.
