This rustic dessert showcases the beauty of simple ingredients, combining fruit with a custard-like batter. Over time, variations have emerged using different fruits, but the classic cherry version remains a beloved favorite, especially in summer when cherries are in season.

Butter a 13 by 9 pan well on the sides and bottom.
Sprinkle plain sugar on the buttered pan, covering the sides and bottom.
Drain the juice from 4 frozen peaches and add them to a bowl.
Add 1 tablespoon of sugar, 1 lemon zest, and 1 tablespoon of lemon juice to the peaches and mix until slightly chunky.
In a separate bowl, add 1/2 cup of sugar, 1 teaspoon of vanilla, and 1/2 teaspoon of almond extract.
Crack 4 large eggs into the bowl to avoid shell pieces.
Add 1 cup of milk and 1/2 cup of whipping cream to the egg mixture.
Add a pinch of salt and 3/4 cup of plain all-purpose flour to the mixture.
Blend the liquid mixture until frothy.
Spread the peach mixture evenly over the bottom of the prepared pan.
Slowly pour the blended liquid mixture over the peaches in the pan.
Bake in the oven at 350 degrees Fahrenheit for 45 to 50 minutes.
Allow to cool for 30 minutes before serving.
